Artichoke, Olive, and Lemon Pasta: Make Tonight!
Quick and easy dinner tonight
It's Thursday night! So close to Friday, but still Thursday. Cooking on the weeknights is generally no fun, but you still need to eat. This artichoke, olive, and lemon pasta is so simple, you can have it on the table in no time. And It's absolutely delicious and full-flavored.
Let's face it, some nights during the week, it's easier to open a bag of chips and chow down rather than standing over the stove for an hour. But with this super simple recipe from Serious Eats, you can enjoy a delicious dinner without spending much time in the kitchen.
The recipe claims to serve 2, but with 1/2 pound of pasta, you can surely get more than 2 servings out of it. Can't bear to have a dinner without some meat involved? Cook up some chicken breasts, cut them into small pieces, and add them to the pasta dish. Dinner has never been easier!
What you need:
* 1/2 lb. cappaletti or any wide, flat pasta
* 8 oz. jarred halved artichokes
* Zest of 1 lemon
* Juice of half a lemon
* 4 T olive oil
* 1/4 C roughly torn parsley
* 1/4 C green olives, pitted and halved
* Parmesan to taste
What to do:
1) Boil salted water for pasta and cook pasta until al dente.
2) Slice artichokes into fat pieces and put them in a serving bowl. Add lemon juice and zest, a pinch of salt and pepper.
3) Add olive oil, parsley, and olives and fold the ingredients together.
4) Drain pasta and add it to bowl with other ingredients. Stir together with as much parmesan as you want.
