Easy Father's Day Dinner: Braised Beef Recipe
Every man will love it!
You love your dad, right? Then you need to treat him right on Father's Day. And there's no better way to do so than by getting in the kitchen and making him a gourmet dinner. You don't have to spend an arm and a leg or put in an entire day in the kitchen to make dad happy. Just follow this simple recipe for Braised Beef.
Dads love beef. And while, of course, you can take him out for a steak dinner at a local restaurant, there's nothing more meaningful than a home-cooked meal. This braised beef recipe will also give dad the opportunity to try a little something different, as it's braised in a coconut milk sauce. With chili peppers! Beef and spice, what's not to like? It take a couple hours to cook, but this dish doesn't require you to spend much time working in the kitchen.
What you need:
* 2 hot red chili peppers
* 3 garlic cloves, peeled and chopped
* 1 1-inch piece of ginger, peeled and roughly chopped
* 1 T chili powder
* Juice and zest of 2 limes
* 2 T corn oil
* 1 1/2 lb. beef, preferably chuck, cut into 1-inch chunks
* 2 C coconut milk
* Salt to taste
What to do:
1) Put chili peppers, garlic, ginger, chili powder, and lime juice in food processor and process until minced (you can do it by hand if you don't have a food processor!). Add extra chili peppers if the man you're cooking for loves spicy foods.
2) Heat oil over medium-high in skillet (make sure it can be covered later. Use a dutch oven if possible). Add spice paste from food processor and cook until fragrant, about minutes. Add beef and cook, stirring occasionally until browned and covered in sauce.
3) Pour in coconut milk and bring the mixture to a boil. Then put the cover on the dish and pop it in the oven at 250 degrees for about 2 hours. At this point, take the cover off and continue cooking for another 10-15.
4) Serve the beef over something starchy. We love brown rice, but lots of men love potatoes, so serve with whatever dad would like best. And maybe throw a few veggies on the side because you care about your dad's health.
