Get Your Irish On With Guinness Cupcakes

The perfect St. Patty's treat

What's the best way to celebrate holidays? With cupcakes, of course. And since St. Patrick's Day calls for lots o' Guinness, the best baked good to make is Guinness cupcakes. Simple to make and deliciously Irish, your friends will go crazy for these. And you might just start making them for every holiday.

I don't think anyone can deny the fact that most people's favorite things include beer and cupcakes. So, why not combine the two into one glorious St. Patrick's Day treat? Oh, and why not throw on a little Bailey's frosting for good measure? Bake them, frost them, and then decorate then however you choose. But a little green and a shamrock never hurt anyone.

Here's what you need:

- 1.5 C Guinness
- 1 stick butter, plus 1 T (unsalted)
- 3/4 C unsweetened cocoa powder
- 2 C dark brown sugar
- 3/4 C sour cream
- 2 eggs
- 1 T vanilla extract
- 2 C flour
- 2 1/2 t baking soda

For the frosting:

- 8 oz cream cheese
- 3.5 C confectioner sugar
- 1/3 C milk
- 3 T Bailey's

Here's what you do:

1) Chop your butter into pieces and melt it in a saucepan over medium heat with the Guinness.

2) When it's melted, remove pan from heat and whisk in cocoa and sugar.

3) In a separate bowl whisk together, sour cream, eggs, and vanilla. Add this to the beer and butter mixture.

4) In a third bowl sift together flour and baking soda. And fold that into the chocolate/butter/Guinness mixture.

5) Stir to get lumps out and then pour into cupcake papers in a cupcake pan.

6) Bake cupcakes at 350 degrees for about 20 minutes. Let cool completely.

7) Now for the frosting! Cream the cream cheese with a mixer and slowly add confectioners sugar about a cup at a time, while continuing to mix. In between add a little of the milk and a little of the Bailey's. Keep adding the sugar until the frosting is a consistency you like.

8) Frost the cupcakes and decorate.

Now crack open another Guinness, grab your friends, and celebrate St. Patrick's Day!
