Never thought tart could be so sweet

It all started with PinkBerry. Soon after PinkBerry, tart yogurt shops starting popping up everywhere. And then before long, our whole perception of frozen yogurt changed. This is a good thing for our bellies, and something you can replicate at home, too!

Frozen yogurt used to be something that tasted a whole lot like ice cream, but with a bit less fat. Now? Frozen yogurt is becoming a whole lot healthier these days. When you taste the tart frozen yogurt that's popping up everywhere, you'll see that it actually tastes a lot like the yogurt you're used to eating when you're trying to be healthy.

This is a good thing for anyone who enjoys a frozen treat but doesn't want all the calories and fat. Tart frozen yogurts generally have no fat and about 125 calories in a small serving. Of course, you'll want some toppings along with your yogurt and that's where the fat and calories can get you. But most tart yogurt spots offer tons of fruit options, so you don't have to go empty yogurt-ed to stay healthy. Just don't load your yogurt with candy bar pieces and sugary cereal and you should be OK.

Tart yogurt also offers all the health benefits of regular yogurt. It contains live active cultures and is said to be very healthy for the digestive track.

If tart yogurt places aren't popping up in your area or you're just looking to save some money, you can quite easily make your own yogurt at home! I found this fabulous David Lebovitz recipe from 101cookbooks. It does use full-fat Greek yogurt, but you can substitute for low fat yogurt (I think Greek would be best) as well. Also, you can use as much sugar as you want.

What you need for 1 quart:

-3 cups (720g) strained yogurt (see below) or Greek-style yogurt
-3/4 cup (150g) sugar
-1 teaspoon vanilla extract (optional)

Directions:

-Mix together the yogurt, sugar, and vanilla (if using). Stir until the sugar is completely dissolved. Refrigerate 1 hour.

-Freeze in your ice cream maker according to the manufacturer's instructions.

-To make 1 cup (240g) of strained yogurt, line a mesh strainer with a few layers of cheese cloth. then scrape 16 ounces or 2 cups (480g) of plain whole-milk yogurt into the cheesecloth. Gather the ends and fold them over the yogurt, then refrigerate for at least 6 hours. So, for the above recipe start with and strain 6 cups of yogurt.
